 Cranes Christmas Cocktail

Bring 1/2 cup of sugar and 1/2 cup of water to the boil, stirring gently. Simmer without stirring for 10 minutes. Add one punnet of washed, hulled and chopped strawberries and simmer til the strawberries are soft. Cool. Add 1/2 cup of good quality gin or vodka and mix well. Place a generous slurp in the bottom of a champagne flute, and top with Sparkling Moscato, and a sprig of mint for decoration.
